Emeril’s Famous BAM! Chips

Home made chips with Parmesan cheese and a taste of Emeril’s.

  • 1/4 cup vegetable oil (for frying)
  • 2 Idaho potatoes (peeled and thinly sliced)
  • Parmesan or Romano cheese (finely grated for dusting)
  • Emeril's® Original Essence (dusting)


Heat oil in a large, heavy pot to 360ºF. Only fill oil halfway up the sides. Carefully, add potatoes to hot oil and fry until golden brown. Remove from oil with strainer or slotted spoon, and drain on plates lined with paper towels. Sprinkle with Parmesan cheese and Essence. Tip: Be careful whenever you fry! Makes a batch
