Dijon Mustard Vinaigrette Recipe

  • 1/4 cup Emeril's® Dijon Mustard
  • 2 tbsp white wine vinegar
  • 1 tbsp shallots, minced
  • 1 cup canola oil
  • 1/2 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1 tsp fresh thyme, minced


  1. In a small bowl, whisk together the mustard, vinegar and shallots.
  2. In a slow, steady stream, while whisking constantly, drizzle in the canola oil.
  3. Add the salt, pepper and thyme, and whisk to combine.
  4. Refrigerate until ready to serve. May be made up to two days in advance.
  5. Serve as a salad dressing over your favorite greens.
