Emeril’s Famous BAM! Chips Recipe

- Homemade chips with Parmesan cheese and a taste of Emeril's.
Ingredients
- 1/4 cup vegetable oil, for frying
- 2 Idaho potatoes, peeled and thinly sliced
- Parmesan or Romano cheese, finely grated for dusting
- Emeril’s® Original Essence
Directions
- Fill a large pot halfway with oil and heat to 360 degrees.
- Carefully add potatoes to hot oil and fry until golden brown.
- Remove from oil with strainer or slotted spoon and drain on plates lined with paper towels.
- Sprinkle with Parmesan cheese and Emeril’s Original Essence.
