  • Homemade chips with Parmesan cheese and a taste of Emeril's.


  • 1/4 cup vegetable oil, for frying
  • 2 Idaho potatoes, peeled and thinly sliced
  • Parmesan or Romano cheese, finely grated for dusting
  • Emeril’s® Original Essence


  1. Fill a large pot halfway with oil and heat to 360 degrees.
  2. Carefully add potatoes to hot oil and fry until golden brown.
  3. Remove from oil with strainer or slotted spoon and drain on plates lined with paper towels.
  4. Sprinkle with Parmesan cheese and Emeril’s Original Essence.


Be careful whenever you fry! Makes a batch.
